“What’s for dinner?…Ravioli & ‘CROCKPOT PASTA SAUCE’!”

One of my other go to dinners consists of cooking some ravioli, warming up a jar of pasta sauce (remember to get an organic or HEALTHIER brand if possible or try my easy ‘CROCKPOT PASTA SAUCE’ below), sautéing some fresh mushrooms (start low and poor the natural juices off as they cook, seasoning with a little garlic salt), and adding a ‘DINNER SMOOTHIE’ like I often do with dinner since it’s refreshing, tastes delish, HEALTHY (I can hear my cells singing as we speak) and is easier than a salad!

Usually ‘COSTCO’ has a great tasting organic ravioli available in the refrigerator section.  We like to get the spinach and squash kind.  Yes, they may have a little cheese, and it is processed, but it’s organic, and organic is always better and less inflammatory than GMO and other processed foods.

Here’s the finished product.  And yes that is a little parmesan cheese you see there, with an emphasis on little!  Although it’s not necessary, it’s delish!

I love this pasta sauce!  It’s so easy and I know there’s nothing in there that shouldn’t be.  It has a rich, deep taste and is a smooth sauce, full of the phytochemical lycopene.  The HEALING, antioxidant power of lycopene is greatly enhanced when the tomatoes are cooked.  (Although I still do love a fresh, ripe garden tomato!)

CROCKPOT PASTA SAUCE

  • 4 cups chopped fresh tomatoes* or 1  28 oz. can diced tomatoes
  • 1  6 oz. can organic tomato paste (I get it at ‘COSTCO’.)
  • 1 small onion, coarsely chopped
  • 5 medium cloves garlic, skins peeled off
  • 1 cup purified water
  • 1/4 cup organic balsamic vinegar
  • 1 Tbsp pure maple syrup
  • 1 Tbsp Simply Organic Italian Seasoning or any HEALTHY brand
  • 1 Tbsp Real Salt*or 1 1/2 tsp sea salt

Place all ingredients and cook on low all day or high for 3 hours.  Process in crockpot with immersion blender until smooth.  You can make several batches and freeze for later.  This works great on the stove top but requires some babysitting.  Just bring ingredients to a boil, turn to low, cover and simmer for a couple of hours and then mix with immersion blender.

*What to do with those leftover straggler tomatoes from lunch or dinner?  Place them in a 4 cup container in the freezer until you have enough to make a batch of my ‘CROCKPOT PASTA SAUCE’

**I love ‘Real Salt’!  So much better for you than all the others. You can find it on ‘VITACOST’, or in bulk at ‘GOOD EARTH’ in Utah, or ‘BOUNTIFUL NUTRITION’ in Bountiful, Utah.  I’m sure ‘WHOLE FOODS’ has it as well.

Here’s what it looks like before I cooked it.  I had these beautiful leftover tomatoes from my daughter Katelyn’s reception in December.  I washed them and put them in the freezer and they worked awesome for this recipe.  Use any tomatoes.  You really can’t go wrong!
