“What’s for dinner?…’SEAFOOD TACOS WITH SUNNY CITRUS DRESSING’!”

♥Hi Friends!

Guess what?  It’s “Taco Tuesday”!  In fact, every Tuesday is “Taco Tuesday”.  Something that was lost to me until I started my Instagram account and now see people all the time (well Tuesdays really) post all sorts of delicious taco recipes.  So, after putting these together the other day for a lunch date with my dear friend Holly, I have decided to throw my “Taco Tuesday” hat (or sombrero really) in to the ring!

Prep to dinner table was maybe 30-40 minutes.  So they quickly earned a spot on one of my “What’s for dinner?” posts.  I love it when something so easy is also tasty and HEALTHY!  The recipe calls for shrimp or salmon.  I prefer the shrimp, but either is delish.  Also feel free to slather the dressing on!  And the way the flavors of the ingredients mix..may I say they are yuuuuuuuumy!?!  Wowza!  Sooo yummy!

Oh, and just a little FYI.  I asked my friend “Google” and found out that there really is a “Taco Tuesday”.  It was started in 1982 as a restaurant promotion by TACO JOHN’S.  Who knew!?!

SEAFOOD TACOS WITH SUNNY CITRUS DRESSING

  • shrimp or salmon, prepared
  • avocado oil
  • organic garlic salt
  • purple cabbage, chopped
  • green onions, chopped
  • cilantro, chopped
  • avocados, chopped
  • corn tortillas
  • ‘SUNNY CITRUS DRESSING’

Remove tails from thawed shrimp and fry in a little avocado oil, seasoning with garlic salt to taste.  If using salmon, I like to fry it in avo oil, flipping when browned, and breaking it up as it cooks, seasoning both sides with garlic salt.  Breaking it up allows the heat to reach the thicker parts, making sure it cooks more evenly.

Chop veggies and prepare dressing while seafood is frying.

When everything is ready, prepare organic corn tortillas to your liking, depending on the brand.  You can warm them on a non-stick pan until they start to curl, or lightly baste with avocado oil and fry just until they start to crisp, wrapping and folding in a paper towel as they cool and form.

Fill shells to liking and enjoy!

 

SUNNY CITRUS DRESSING

  • 3/4  cup avocado oil
  • 3/4  cup fresh squeezed orange juice
  • 2  Tbsp raw honey
  • 1  tsp raw apple cider vinegar
  • 2  Tbsp chia seeds
  • 1  tsp Real Salt or 1/2  tsp sea salt

Process all ingredients in mini food processer.  If using a high power blender, process all ingredients except chia seeds, stirring them in last.
