“Hi Friends! Pray!… & a recipe for ‘Sushi Bowls’.”

Why a blog?  I’ve had enough family and friends ask questions, ask for information, and ask for recipes, that I needed to get on the stick (what does that mean anyway?) and get organized.  And since organization isn’t exactly my strong point (just sayin’), I decided this would be the best way to organize my crazy brain and share the things I am learning.  I am no expert but I have a loving Heavenly Father (as do you) who helps me move forward in my journey.  He wants all His children to HEAL and learn to empower themselves SPIRITUALLYPHYSICALLY and EMOTIONALLY (or SPIRIT, BODY and MIND).  They are all connected and all three are important on the path to HEALING.  One does not trump the other.  (We’ll talk about the connection and what it means in later posts but think along the lines of ♥SPIRITUAL habits that help us remember who we are and Whose we are, ♥nourishing, HEALING and yummy food that make your BODY strong and your cells sing “Hallelujah!”, and ♥gratitude and HEALTHY MINDS and attitudes.)

There’s so much to cover and I hope to effectively share what I’ve learned.  I know Heavenly Father wants us to be happy, and because of that I think the best place to start is on your knees.  Pray and ask for help and direction as you learn about HEALING and continue down His “Happy Path”!  It takes time and change.  And change is almost always a little painful.  Sometimes a lot painful.  I’ve certainly skinned my knees often as I’ve made changes and introduced change to my family.  (We’ll talk about introducing change to our families in a later post.  Phew!  That’s where we have to get creative!)  But it’s totally worth it!  One of my favorite quotes lately (it’s actually on my fridge as we speak) is from Henry B. Eyring and his awesome mom.  I think she must be awesome, ’cause he’s a stellar guy.  It goes like this:

“If you are on the right path, it will always be uphill.  The Lord is anxious to lead us to the safety of higher ground.” 

His mom use to tell him the first part while he was growing up.  Later he added the second sentence.  I!  Love!  This!   Anyway, He (God) knows best and He sees the bigger picture.  I can’t think of a better guide!

Here’s a yummy, plant-based dinner idea.  It’s full of amazing and HEALING foods.  Your cells will rejoice!  We love to have fun every once in awhile and get fancy and make sushi (which I learned from my Japanese friend Konomi!)  My #1 (a daughter) came up with the “bowl” idea (I think from left over ingredients from a sushi session), and I put together the sauce recipe.  Don’t tell the family it’s plant-based.  Don’t tell them anything.  Just try it out and if they like it, add it to the rotation!

SUSHI BOWLS

  • 2 batches* brown rice and 1 batch* quinoa, cooked with 1 heaping Tbsp ‘Better Than Bouillon Organic Vegetable Paste’ (or you can use organic vegetable broth and a little salt if it’s low sodium)
  • raw nori sheets**
  • cucumbers, quartered and sliced
  • carrots, shredded
  • jicama, chopped in to sticks
  • avocadoes, chopped
  • water chestnuts, sliced
  • green onion, chopped (I use most of the stem too!)
  • oranges or mangoes*** (or both), chopped
  • cilantro, chopped
  • mint leaves, chopped
  • spinach, chopped
  • raw sunflower or pumpkin seeds
  • gomasio (I use the ‘Eden Organics’ brand with garlic in it and purchased it on ‘AMAZON’) or toasted sesame seeds (in the oriental foods section) and sea salt
  • shrimp or salmon****
  • ponzu sauce***** or tamari (a gluten-free, milder, HEALTHIER soy sauce) and freshly squeezed citrus juices.  (You can also use ‘Bragg’s Liquid Aminos’ in place of the Tamari.)

Ponzu Sauce

  • 1/2 cup of fresh citrus juice (I like to lemons or limes with some orange or mandarin juice.  Or a mixture of all them!)
  • 1/2 cup tamari
  • 1/4 cup brown rice or rice vinegar
  • 1/4 cup vegetable broth or ‘Better Than Bouillon Vegetable Paste’ and water equivalent
  • zest from citrus (opt.)
  • 1 clove garlic, minced (opt.)
  • 1/2 tsp grated ginger (opt.)

Prepare rice/quinoa mixture.  Mix up the Ponzu Sauce, prepare the rest of the ingredients and put them all in bowls.  Get the family involved and make it fun!  They can help chop and prepare.  When everything is ready, put it all out and everyone makes their own bowl, topped off with some sprinkles of gomasio and the ‘PONZU SAUCE’ as dressing.  This is our favorite comination of veggies but you can come up with your own.

*A “batch” refers to the serving sizes in the rice cooker.  I cook the rice and quinoa together.

**Nori sheets can purchased at the store in the oriental section but I like to get the s ones on Amazon.  The ‘Navitas’ or the ‘Izumi’ seem to be good brands.

***I find the easiest way to prepare the mango is to peel it, then score it around the pit and slice if off.  That way you can get as close to the pit as possible.

****I like to buy the bags of Atlantic salmon at ‘COSTCO’ and fry some fillets in a little EVOO or avocado oil and a little garlic salt.  Break the salmon apart in littler pieces while cooking.  REMEMBER:  Use the shrimp or salmon more as a condiment than a serving.  It’s there to add a little flavor.  You can also use smoked salmon.  ‘COSTCO’ has that also.

*****The ‘PONZU SAUCE’ can be made ahead and stored in the refrigerator.  Or if you’re lazy sometimes like me, you can purchase some in a bottle on line or in the oriental section of the grocery story.  Or you can just cut some citrus fruits in wedges and along with some Tamari sprinkle those on your bowl.
