“What’s For Dinner?…’Wonton Salad’!”

♥Hi Friends!

With the last few months of craziness in my home, I’ve done a lot of “fly-by meals” (and many more than normal trips to In-&-Out) with the precious little time I’ve had.  And I suspect I’m not the only one who understands “craziness” and “precious little time” huh!?!  We are women, doing our best to juggle all that life throws at us, along with caring for ourselves, our families, and all the world around us.

And as I’ve been working on creating another page (located on the tool bar at the top of the blog) organizing my recipes for easier access, another idea kept nagging at me which lead to the creation of the “What’s For Dinner?” page, even before I get my “Recipes” page finished.

“What’s For Dinner?” (also located on the tool bar at the top of the blog) is a place to go for quick and easy, last minute, “fly-by-meals” ideas that I will post once a week or so.  Some of them come from recipes I’ve already posted.  And some are just thrown together with a few ingredients I try to keep on hand.  Now, I believe in eating as HEALTHY as possible, as often as possible.  With that said, these meals may or may not include some processed foods, which I’m good with! (Click here for my thoughts on eating HEALTHY.)  But in the end I hope to alleviate some stress in what can be (and very often is) a very stressful time of the day (dinner) and help you help your family eat HEALTHY!

The first recipe I’m posting is a delicious meal that my family loves!  Like seriously, they love it!  And they tell me every time we make it.  It’s an easy fix anytime, but I especially love it after we’ve been to church and I don’t have any idea what in the world I’m going to make and everyone is surely going to starve to death.  (I guess from SPIRITUAL exhaustion, hehe!)

WONTON SALAD

Find the healthiest wontons or pot stickers as possible.  Although they are processed, you can find some fairly decent ones, and even organic, at Costco, Whole Foods, or any health food grocery store.  Just look at the ingredients and listen to how you feel about it.  (That’s your BODY telling your MIND!)  Drizzle a little avocado oil, about 2-3 Tbsp, in a large frying pan and then pour about 1/4 cup water in there too.  Add wontons or pot stickers and fry, stirring occasionally, until the water is evaporated and they are cooked through and to your liking.  (We like to eat ours browned!)  While cooking, prepare MAPLE VINAIGRETTE.  To serve, layer greens and wontons on a plate and drizzle with dressing,

 

Found these at Costco.  The little bit of cilantro adds a little fresh and delish taste!
